INGREDIENTS
Pineapple Rotisserie
- 1 Pineapple, whole
- 4 Vanilla beans, halved lenthwise
- Olive Oil As needed
Spicy Banana Caramel Sauce
- 4 oz butter
- 8 oz sugar
- 2 bananas, sliced
- 2 T ginger, peeled and chopped
- 4 vanilla Beans, halved lengthwise
- 1 jalapeño, sliced
Pineapple Rotisserie
- Clean and peel the pineapple.
- Cut the halved vanilla beans in half. With a larding needle, place them through the pineapple.
- Cook 1 hour on the rotisserie on high. Baste occasionally with olive oil.
Spicy Banana Caramel Sauce
- Melt butter slowly, add sugar and cook on medium until caramelized.
- Add banana and ginger
- Carefully deglaze with 1 cup of water.
- Add vanilla beans and jalapeño, cook for 5 minutes.
- Transfer entire mixture to a blender and blend. Add water if needed. Let cool before serving with pineapple slices and ice cream.
