INGREDIENTS

For the Nicoise dressing

  • 1 clove Garlic, shaved on a microplane
  • 1/2ea Lemon juice
  • 1 tbsp Dijon mustard
  • 1ea Shallots, chopped
  • 4 tbsp Olive oil
  • Pinch of Salt
  • Pinch of Pepper

To Build

  • 1 cup Mixed greens
  • 6ea Cherry tomatoes
  • 1/2ea Red bell pepper
  • 1/2ea Green bell pepper
  • 1/4ea bulb Fennel
  • 1/2ea Celery stalk
  • 1ea Persian cucumber
  • 10ea Kalamata olives
  • 1ea Boiled egg
  • 4 tbsp Nicoise dressing
  • ½ can Tuna, canned in oil
  • Scallions, sliced
  • Radish, sliced
  • Salt
  • Pepper

INSTRUCTIONS: 

For the Nicoise dressing:

  1. Add everything but the oil to a bowl.
  2. Slowly drizzle in the olive oil while wicking constantly to form an emulsion.
  3. Season with salt and pepper.

To Build

  1. Add the greens to the bottom of a plate and top with half of the dressing.
  2. Top with each component making sure to do the scallions and radish last.
  3. Finish with the salt and pepper.
