  • 6ea Eggs, blended
  • 6 tbsp Vegan butter
  • 4 tbsp Vegan Cream cheese
  • 8 Slices Vegan American cheese
  • 2 Brioche bun
  • Salt
  • White pepper
  • Piment d'Espelette

INSTRUCTIONS: 

To make two sandwiches

  1. Heat the butter in a pot over medium heat.
  2. Brush half of it over the cut side of each bun.
  3. Add the egg to the remaining butter along with the espelette and season with salt and white pepper.
  4. Whisk constantly until they have set in small curds and are beginning to look dry,
  5. Remove from the heat and whisk in the cream cheese.
  6. Add the american cheese to the top and bottom of the bun and toast in the oven at 390 until melted. and plate the eggs on the bottom.
  7. Add the cooked eggs and the top bun and heat in the oven until crunchy. (About 3 min)
  8. Remove and serve.
